Makes one serving
2 small flour or corn tortillas
⅓ C cheese, grated (use cheddar, colby, jack, or similar cheese)
Heat griddle or frying pan to medium heat.
Place one tortilla on the pan and cover with cheese and other fillings.
Cover with second tortilla. Keep a close eye on the quesadilla.
When cheese is melting and the bottom browned to your liking, carefully flip the quesadilla to the other side. Start checking after 2-3 minutes.
Cook second side 2-3 minutes.
Optional additions: green chiles, jalapenos, shredded chicken or beef, diced bell peppers, olives, etc.
