½ Cup sugar

4 Tablespoons cornstarch

⅛ teaspoon salt

3 egg yolks

2 ½ cups whole milk

2 Tablespoons butter

2 teaspoon vanilla extract


  • In a large pot mix together ½ Cup sugar, 4 Tablespoons cornstarch, ⅛ teaspoon salt, 3 egg yolks

  • Gradually add in 2 ½ cups whole milk and mix until most of the egg mixture is dissolved.

  • Over medium heat gradually bring the mixture to a boil, whisking frequently to prevent burning until mixture is thick (about 8 minutes).

  • Once the pudding has come to a boil, remove from heat and add in 2 Tablespoons butter and 2 teaspoon vanilla extract. Whisk until they are combined.

  • Eat warm or cover with plastic wrap pushed down to the surface of the pudding and refrigerate until cool.

* To make chocolate pudding reduce the vanilla extract to 1 teaspoon and add in 12 oz chopped chocolate (about 1 bag of chocolate chips) once the pudding comes off the heat. Stir the chocolate to melt it into the pudding.

 **This makes a good pie filling for a cream pie.
