Cheese Bread

adapted from Kitchen for Kids by Jennifer Low

1/2 cup milk

1/3 cup butter

2 cups all purpose flour

2 teaspoons baking powder

1 ½ teaspoons sugar

1 teaspoon salt

2 eggs

1 cup grated cheese (cheddar, jack, mozzarella, etc)

  1. Preheat the oven to 350°F and grease loaf pan

  2. In a medium microwave-safe bowl heat 1/2 cup milk and ⅔ cup butter until butter melts. Set aside to cool slightly.

  3. In a large mixing bowl combine 2 cups flour, 2 teaspoons baking powder, 1 ½ teaspoons sugar and 1 teaspoon salt. Whisk to combine dry ingredients.

  4. In a small bowl crack one egg at a time, check for shell and add to the milk and butter mixture. Mix together to break up egg yolks.

  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over mix.

  6. Fold in 1 cup of grated cheese.

  7. Scrape dough into loaf pan and bake for 40-50 minutes. Use a toothpick or wooden skewer to check when the bread is done. Remove from oven, cool slightly and enjoy the bread warm.
